you must have done something wrong. methanol (CH3OH) should have an i value of 1 and NaCl a value of close to two. and why would you start with solute and add water???? Thats ridiculo!! but anyway, aside from the stupidity of the lab, some probable sources of error would be loss of energy to the surroundings, improper weighing, impure solutes, and ION PAIRING. thats a huge source of error. ideal i value would break ions exactly. However, oftentimes only a certain amount breaks up, reducing i value. like weak acids, such as acetic acid (CH3COOH)
