tell me about FRESH COFFEE?
Hi, for christmas i got a nice little coffee maker and a top quality coffee grinder with 3 settings on depending on how fine etc i want me beans!! Anyway id like as many simple tips and stuff from experienced coffee drinkers as possible...like, I dont know what beans people generally like, i dont know about the importance of storing the beans and like how fine or my ground beans should be? and do i grind a days worth or just what i want etc please help
Well, First you need to know what kind of coffee youd like to start off with...Dark Roast: French Roast, Kenya, Sumatra, etc.. Medium(house blend) Roast: Guatemala Antigua, Pike Place, Decaffeinated: any of the above but just decaf
the smell of coffee is important. tasting it with the right pastry is important. For example, you might want to eat a lemon bar or muffin with a dark roast like Kenya. This is due to the fact that Kenya is high on acidity and so is a LEMOn Bar. The two flavors will compliment eachother..HOuse blends taste good with cookies and chocolate bars.
The GRinder has different settings and it all depends on what your brewing. For espresso you want to use fine as a setting. Make sure the coffee beans are from a freshly opened bag. Leaving a coffee bean bag open for too long will reduce the quality of the coffee. Also, NEVER put your left over coffee bag in the fridge or freezer. The way coffee beans stay fresh is due to the natural oils it contains. When leaving it in the fridge, those oils are absorbed. IF you want regular, lighter, coffee set the grinder to like a 3 or 4(where the beans are not finely chopped)
If you just want my opionion, I think "Cafe BUSTELO" is great for dark espresso blend. IT is cheaper than starbucks coffee but just in money not quality. They sell it everywhere 
always check the date! always used clean FILTERED water, always have the right amount of everything(coffe, water)

Why is my fresh-ground coffee so WEAK and WATERY?
I just bought a coffee grinder and some delicious-smelling Archer Farms Tanzanian Peaberry whole-bean coffee. I've had this before at a local cafe, and it was AMAZING. (Thought it quite possibly wasn't the Archer Farms variety.) But I can't replicate it here with my drip coffee maker. It's just SO weak. I tried adding 4 tsp of very fine grounds to 12 oz of water and 3 tsp of coarser grounds to the same amount with essentially the same result. Can someone offer some advice?
For a drip coffee maker with a filter, fine grind beans are what you need. But you may need to use more of them if your coffee is turning out weak. Coarse grind can't do its work in a drip machine because the water only passes through the beans briefly. They are better suited for brewing methods where the beans sit in the water for several minutes, which brings me to my next point...
If you're on a hunt for awesome coffee, your next step should be to buy a French press. Is your coffee grinder the blade type, or a burr grinder? The blade type tend to give inconsistent results, where you have fine grinds mixed in with the coarser stuff. For a French press, you need a consistent coarse grind. And only grind your beans when you're ready to use them. And despite common advice, do not store them in the fridge or freezer -- the coffee will hate you for this. Keep them at room temperature sealed in an airtight container away from sunlight.
