They buy the bread that's available to them, it's better to remove as many animal products as possible from one's diet than to give up and do nothing at all.
It certainly doesn't help for you to stare down your nose at people that are either unaware of these things or for one reason or another don't go that far to remove animal products from their lives. Is it not better for someone to even eat one vegetarian meal a week than to eat none at all? So for someone who eats an entirely plant-based diet aside from the occassional animal-sourced ingredient in some bread, I would say that's overwhelmingly beneficial to the planet and to animals as a whole.
The food industry renders just about every strip of fat and flesh and bone they can from the slaughterhouse waste it produces. Should you perhaps eliminate all produce from your diet, because odds are there is animal-rendered fertilizer on it, since it did grow from soil? Perhaps you should also stop showering because you bathe yourself in water that passes through a rubber ring that is made with rendered animal fat, something that is essential to plumbing and to even have a shower in the first place.
How far do you go? How far do you go to criticize people who are a step or two behind you on your path? Does this accomplish anything or advocate positively for vegetarianism as a whole? Or does such a critical attitude show your own lack of understanding for others, and perhaps also reveals that you are unable to reflect upon yourself at all, since no matter what you do, you encounter rendered animal products daily by existing in a civilized society?
People in general do as much as they can, and as much as they are willing to. I am fully aware that I could be even more vegan if I were to live off of scavaged foods entirely, shunning all civilization, refusing to live in a society with rubber rings in showers or leather bus seats or paved roads (with bone meal and other rendered parts). But the point is, you do as much as you can, and I'm no better than those that are still a step behind me. What's right and convenient for me and my life can easily be trumped by a much more psychotic vegan than me, but it's also very far ahead of many other people. So what? It just means I'm living my life how I prefer, and you should live yours the same way.
